I thought I’d share this with you - it’s my favourite meal creation of the moment. It only takes 10 minutes to cook and it’s sooooo tasty. Handily you don’t even need a load of fresh ingredients. I currently fall back to this dish whenever I run out out of fresh things.
While the pasta’s boiling, roughly slice some sundried tomatoes (I get these in olive oil in a jar and have a few such jars in the cupboard - they keep for ages) and some peppers (optionally also from a jar - I like roasted red peppers). Then fry some cubed pancetta for a few minutes (I fried mine in the yummy garlic infused olive oil Sue got me for christmas). Once the pasta is done, drain and add back to the pot with the peppers and the tomatoes, sprinkle with a little olive oil (the oil from the tomatos is pretty tasty) then add some basil, stir and heat through. Serve with a liberal dusting of ground black pepper and parmesan.
There are lots of variations around this theme using e.g. parma ham instead of the pancetta, adding mushrooms or olives, frying some onions or fresh peppers with the pancetta, etc etc…
